Evolution initialises the X display very early on in the application, so if you try and execute it without a DISPLAY being defined it fails. No doubt the evolution-backup executable does the same thing since I suspect it is based on the same code. I'm not sure that the evolution-backup executable is designed to be run by the user - isn't it just called by the main evolution application when a backup is required?
