Have you followed the debugging hints at https://projects.gnome.org/evolution/bugs.shtml Running Evo from the command line with CAMEL_DEBUG=all might give you sufficient hints as to where the problem is. Alternatively, getting a backtrace when Evo is stuck will give those that know about such things sufficient info to tell you what it is doing at the time.
