The relationship between the settings and Evo's preferences is not always obvious. Using gsettings at all requires one to have a working knowledge of 'schemas', 'keys' etc., which are not part of the mental baggage of the typical email user even when there's a graphical interface for it, and of course some of us actually use Evolution on other desktops.
