+1, but there should be a link to it from within the Evo UI.

The relationship between the settings and Evo's preferences is not
always obvious. Using gsettings at all requires one to have a working
knowledge of 'schemas', 'keys' etc., which are not part of the mental
baggage of the typical email user even when there's a graphical
interface for it, and of course some of us actually use Evolution on
other desktops. I use KDE and getting to the Gnome settings already
requires typing a command to a Shell.

Agreed. There are a few references to gsettings in the Evo help but not
specifically for the case I was asking about, besides which the typical
user is not going to know to do a search for 'gsettings'.
