I tend to do that with the folder rules.
EG set up a folder called WORK that is to track messages to/from
somecompany.com. Then in the rules for that folder say that you want it
to record messages where the recipient or sender contains
somecompany.com. I tend to make the rule work on specific folders and
point it to the inbox and sent. 
So if I then get a message from '[EMAIL PROTECTED]' it is filtered to
WORK and similarly if I mail someone at somecompany.com it is also
filtered to WORK.
You still then have the message in the inbox/sent, but also then
filtered into the 'virtual' folder WORK (WORK is in effect a 'view' of
the Inbox and Sent folders).
Does that make sense?
