At work I send via Evolution Exchange all the time without a hitch. 
Just make sure your Exchange identity is selected from the dropdown when 
composing new e-mails.

However, I also have other mail accounts setup, so its conceivable I've 
been using one of those to send e-mails without realizing it.

I can double check Monday at work.
