The From field does exactly the data you entered when setting up the
mail account.
If you do have more than one valid address to send from, you'd need to
set up an account for all of em. [1] After that you can use the From
drop down to switch your sending account in the Composer. While replying
to a message, Evo will guess the correct address to send from by the
mail you are replying to. HTH

[1] The necessary bit is the Sending information. If you don't need to
fetch mail, set Receiving to none.
