Totally ignorant question: what would happen if you found the modem and 
pulled its SIM, maybe replacing the SIM with an old, invalid one, or just 
disconnected the modem from the power and/or antenna?  

I suppose that you might lose your driving assistance, if it relies on 
Tesla's servers, but that's just a guess.  

You might also lose your GPS navigation, depending on how much data it 
stores locally.  You could use a standalone navigator (Tomtom, Garmin, etc) 
instead.

What else?

Would the car brick itself if it couldn't phone home for some period of 
time?
