Typically, return to center is achieved with an (adjustable) spring if the 
motor is sent forward/backward by the controller from a single potmeter 
movement; or is your original pot not a standard 3-wire (top, bottom, wiper) 
version?

Great ideas. Unfortunately those are all "one sided" in the sense that they
don't return to center or have a center bump to indicate zero throttle. If
the F/R switch worked with a pot it would be a perfect fit. Checking them
out, however, gave me more search ideas and I did find someone who linked
to a 180 degree hall Effect rotary position sensor on DigiKey. I have no
idea what it outputs on the "other side" of the 180 degree output.
Hopefully just the max or minimum output voltage.

I'll report back when I get the part.
