Are you installing into the same directory? It definitely should keep
those. Although it looks like you are doing a downgrade (80 to 72) which
should be giving an error.

Downgrades use a different variable:

The downgrade blocking can be bypassed by setting the environment variable
MOZ_ALLOW_DOWNGRADE or by passing the --allow-downgrade command line
argument when running Firefox.
