I guess my question is:  if we only use one version of Firefox, and we have
a pre-set profile that gets copied into the user home directory on first
successful new user login for both Windows and Linux versions, we should be
ok as long as we don't use any other Firefox version?

I think I've only downgraded once when we made the switch from regular
channel to ESR.  But as I understand what you've sent, existing users will
see no change, and new users should continue to get a pre-set profile under
our scenario.
