I did this in EMC 1. At that time I had to write a special program to do this. The program talked to emc through NML and wrote out the g-code file. However I believe this can now be done in EMC2 with just a g-code sequence.
Be advised that it takes a long time to probe even a small area in this fashion. I did a 4"x5"x1/2" region at .01 inch resolution and it took something like 4-5 hours.
