Sorry, I don't follow. Do you mean the last part of unfill-paragraph,
viz.:
(let ((fill-column most-positive-fixnum))
(fill-region beg end)))
If so, I'm not sure what you expected unfill-paragraph to do here.
There's no fill-region-function AFAIK, only
fill-region-as-paragraph-function.
