Because we live by the clock and not by the sun. And because we're mostly
'evening people'

If the sun rises an hour earlier, most folks won't get up/go out an hour
earlier to enjoy it. But if it sets an hour later, they will stay up/go out an
hour earlier.

And, in many cities, a later sunset simply means the chances of getting mugged are less....as the muggers sleep late...so they miss the sunrise.
