NR settings have never been adjustable. But we do hope to add that
feature in a future release. For now, to adjust the NR parameters you
must use the RX NR menu entry. Search the KX3 firmware release notes
for "RX NR" for details.
You may have been changing the MONitor, AF gain, or RF gain settings.

various knobs and buttons I found that I could change the NR
settings with the knob above the button. I lost that ability when I
loaded the latest beta firmware. I inquired at Elecraft how I could
restore the ability to change the NR settings and was told that that
feature had not yet been implemented. Has anyone with a recent KX3
