A few months back I was also unsure whether we should use the generic- or server kernel for LTSP. I asked on the #ubuntu-kernel IRC channel, and they assured me that for an LTSP server, the generic kernel is definitely the preferred kernel. We've used the -server and the -generic kernels in tuXlabs, but I haven't really noticed any big difference between them.
