Expecting the EDI system to do it is a bit like expecting the phone company to arrange on-the-fly translation when you ring someone in France. Unfortunately those responsible for EDI systems have tended to be nice guys who have done their best to sort the mess out, and thus created a rod for their own backs. There is no proper EDI way, just a series of compromises.
