It might be a bit simple for your needs, but 'Statistics for Terrified Biologists' is probably the most useful stats book I've ever read. It's genuinely readable - a rarity.

I am also reading a book called "Ecological data: Design, Management and Processing (Eds: Michener & Brung)".

Some chapters provide the basic principles for conducting statistical analysis in ecological research.
