Hello Raja, At this time, I believe this is unsupported. I'm not aware of a way to remove all metadata fields (or some metadata fields) from the REST API response. It's a nice idea for the future, but it would require custom code. I'm not sure how best to achieve it or how much effort it would be, but you are welcome to create a ticket in https://github.com/DSpace/DSpace/issues to describe your use case for this feature.
