There's a simple solution to this issue, in
[dspace]/config/modules/authentication-ldap.cfg just set email_field to the
field name you want to use as user's ID, e.g.:
email_field = cn
This is not really an issue, it's only unfortunate that DSpace assumes it can
use user's ID as an email address, which is reported here:

You can break that assumption and everything will work except sending email to
users directly - I'm using this in production.
