I tried adding:
lda_original_recipient_header = X-Original-To
But that didn't add the header for mail over LMTP. I couldn't find
anything else in the docs.
Your MTA (e.g. Postfix) is supposed to add that header. That setting is
only used to tell Dovecot which header name is used.
