That depends, I think, on how you have configured things.

If you deliver mail to maildir in users $HOME, you may be able to use
procmail to redirect the mail. If you have, like I do, mdbox and virtual
users, you should probably look at enabling Sieve in Dovecot and then put
in place a sieve script for the user whose mail you want to redirect. I
think the Dovecot docs have an example for how to do it.

Long and short of it, you will need to explain your configuration a little
more in detail before you will be able to receive a more detailed
response. Maybe others have better insights, but the above is the two
approaches I would consider before doing something more exotic.
