So it looks like you're compiling with gcc 14.2, have you tried an
older version of GCC if possible?  What about if you compile with
clang instead?  

From looking at the error message, it's not really clear if that's a
gcc error or not, but it sure looks like one.

Did you try updating the package build instructions for the mariadb
version to swap in postgresql instead?  

And what configure command did you use to setup dovecot?  Can you try
to compile that file by hand, and removing some of the options like
the -D__FORTIFY__ or other stuff like that.  Get it down to a simple
test case if at all possible.
