I use the same setup with the following packages:

# dpkg -l |grep dovecot
ii  dovecot-core                         2:2.3.21-1+debian10                   
amd64        secure POP3/IMAP server - core files
ii  dovecot-mysql                        2:2.3.21-1+debian10                   
amd64        secure POP3/IMAP server - MySQL support

postfix main.cf Parameters:
...
smtpd_sasl_type = dovecot
smtpd_sasl_path = private/auth
smtpd_sasl_auth_enable = yes
smtpd_sasl_security_options = noanonymous
smtpd_sasl_local_domain = $myhostname
broken_sasl_auth_clients = yes
smtpd_sasl_authenticated_header = no
...

And it works without problems.

Is the dovecot-common package (Debian) enough? Or do I need the full
dovecot-imap package?

What protocols go in the protocols directive? Can you just make it
"protocols = auth" to disable IMAP connections?
