On ubuntu, this is in the "dovecot-solr" package, not the main dovecot
package. With that package installed, I found it here:
/usr/share/dovecot/solr-schema.xml
I've just checked the arch linux package info, and it says you should
find it at:
usr/share/doc/dovecot/solr-schema.xml

Thank You, Shawn! On Arch, solr is not in the official repositories, so
no dovecot-solr, too.
