IMAP's DELETE command actually deletes the folder, it doesn't move it under 
Trash. What you're describing sounds like client is RENAMEing it under the 
Trash. Interesting if it happens with both TB and SOGo, but I can't think of 
how this could be Dovecot's fault in any way.
