You can't do that directly in Dovecot. What you can do is to use a utility called tnef [1] (available in major GNU/Linux distributions) on the client to extract the data on the client. Otherwise you could use ytnef [2] with procmail or Dovecot sieve_pipe [3] on the server (see [4]). I tried tnef on rare occasions and it worked.
