[Dovecot] How to "scramble" emails

Hi,

I am working on a webmail project using dovecot as imap server and I 
would need to make a demo
however I don't want to show all my emails addresses.
So my question is knowing that I am using the maildir format, would it 
ne possible
to do a kind of search and replace of all emails/cc/to and replace them 
by fake ones or will
it break something like indexes ?
