Just install the binaries to different directories and see http://wiki.dovecot.org/RunningDovecot#Running_Multiple_Invocations_of_Dovecot http://wiki2.dovecot.org/RunningDovecot#Running_Multiple_Invocations_of_Dovecot (they're slightly different).
