Okay.  It was my iptables.  Somehow missed this.  Everything works great now.

Thunderbird reads "Connected to" {servername} across the bottom, then times 
out.  I tried to telnet to port 110 on the server, and I

Stop Dovecot and try telnetting to port 110 again. Does it still hang?
If so, change your firewall settings.
