Just don't open the same mailbox with Dovecot and UW-IMAP at the same time! You may also find that UW-IMAP changes the UIDVALIDITY sometimes, which will cause Dovecot to complain next time it opens the mailbox, but Dovecot will be happy again on subsequent opens. We did this for a couple of months before we migrated to Dovecot.
