Replying to myself :) I haven't found the solution yet but after reading a few posts in the group I think I have to try the "dynamic choices in a ChoiceField" approach and forget about the ModelChoiceField.
There seems to be a few options on getting that done so I'll try tomorrow with a fresh brain and will let you know. In the meanwhile, if somebody has any idea please let me know.
