Conceptually, what you said is correct, but TDIITD (The Devil Is In The Details). I believe that the "correct" way to do this is to set default values in the n-value selector widget that displays in the admin add/edit interface. I have spent a fair amount of time this morning trying to figure out exactly how to do this. The answer appears to be to create custom add & change manipulators for Vineyard, something I've not done before.
