These have all been recommended to me in the past but I do not have
much experience with them since I can't spend more than 5 mins working
on a windows machine before I break out in hives :-P

Ping me off list if you want because I could go on for days about process.

Honestly before I even touch a computer I use a pen, paper, and even
glue and scissors on larger projects. A List Apart just posted a great
article about this recently <

For quick and dirty wireframes OmniGraffle <
http://www.omnigroup.com/applications/omnigraffle/ > is great (not
sure of a Windows alternative). You can use Photoshop or Illustrator
(or their open source brethren) as well but it is overkill if you just
need to play with ideas before you dive into design.
