Corey, The general consensus seems to be that you use the built-in admin to get things rolling. Then, after building the front end and to have a fully functioning app, you'll most likely want to build your own customized back end, unless you happen to have a simple publishing/blogging system were the current admin is "good enough". At the same time, some people have significantly customized the built-in admin to suit there needs. Try searching this list for examples.
