I've used Django CMS, but I don't have a grasp of how much work it would be to disable the admin. Two ideas: You could use the Django admin's user permissions to lock down the stuff you don't want them to see. Also, if you don't use the admin now, why not just leave everything out of your admin.py files except for the Django CMS stuff? That way it's not even visible for your users, much less editable.
