Nothing you are trying to do is specific to Open vSwitch. You need
to use Xen commands, instructions for which can be found in the
XenServer documentation.
Perhaps you are thinking of bonding? Xen (with and without OVS)
supports bonding multiple NIC/PIFs together into a single bridge. Try
using the man pages, xe autocomplete, or google for instructions on
how to use xe commands or xencenter to do this - it is fairly
straightforward.
