OVS internally creates exact match flows from the wildcard entries for performance. After 5 seconds of inactivity these flows are automatically removed but will be recreated if more traffic reappears. All this message means is there was traffic but it has not been seen in the last 5 seconds. Note that it is a debug message, not any kind of warning.

Again, ovs-dpctl dump-flows is your friend. It will show you the currently active flows as well as the actions. You must run it while there is traffic on the network due to the 5 second timeout.
