If you root it and put in a replacement recovery system, like
ClockWork, you can make a complete system backup with nandroid and then
copy that off via any usual file transfer method.

If you root it, you can use App2Zip to backup any application
and it's data, to a zip file which can later be flashed with
the recovery system for a complete restoration of one or many
apps.

I have used these systems on two Nook HD+, two Motorola Droids,
a Samsung Galaxy S2, a Samsung Galaxy Nexus, and an LG G2.

Without root privileges, you can't do anywhere near as complete
a job.
