The Volk warning is just telling you that it's falling back to a safe implementation, which could be slower in some cases, but will surely work. To explicitely say it: a warning is a warning that things *might* go wrong. It is not an error. In most cases, one should not heed it too much, unless it seems to be related to the problem at hand.
I think you're seeing a single line jumping up and down, and that is what your data looks like to the wxgui sink. Try using a larger value for t/s, the < > buttons on the upper button row on the very left. Also make sure you're not clogging your CPU with work. If you don't have a hardware device setting the the sample rate (e.g. a USRP, a sound card) in your flowgraph, consider simulating that using a throttle block.
