Tony, You can rotate the sheet orientation - landscape/portrait.
If you have downloaded the shapes library the you have all that exists. You can make your own symbols and put then in a separate Dia for copy and paste, or you can learn how to make shapes and sheets that can become palettes. It is the blessing of Dia that you can make your, own, but that may mean you need to make your own.
