Any text containing special charactes, which are needed for LaTeX, will be

Yes, intentionally. See : https://bugzilla.gnome.org/show_bug.cgi?id=143414
and a lot of duplicates, e.g.:
https://bugzilla.gnome.org/show_bug.cgi?id=112377
When typing: $ x $ The exporter saves \$ x \$ to the .tex-file.
But now, LaTeX will render the Dollar Sign '$' instead of switching in math
mode.

Yes, everything is escaped. Despite some ideas mentioned about the
usefulness to act otherwise in:
http://git.gnome.org/browse/dia/tree/plug-ins/pgf/render_pgf.c#n27
the reason is explained later in the same file:
http://git.gnome.org/browse/dia/tree/plug-ins/pgf/render_pgf.c#n1100
I would be very glad, if there is a solution or workaround.
Just patch your version of Dia to not escape strings and live with the
limitations it imposes. Or make a proposal (provide a patch) which
overcomes the limitations a lot of other people complained about.
