(I`m just a user) You can change deffault settings of shapes: you have to double click on the icon corresponding to the one you want to change: (the icon on the main menu); next times you load that shape it will have the new settings. Each shape has its own properties; and for example Ellipse does not admit a test in my Dia. May be the Connector shape (from FlowChart) is better for yow: it looks as an ellipse and admits a text, centered by default.
