Using a glyph-based emoji font like Android Emoji [1] does work. If your interest is in having a full-color emoji set for an application, it’s probably better to stick with real images. If you have one you’re interested in testing, the emulator will work the same way as the device. Put fonts in /usr/share/fonts/ and run fc-cache.
