Well, I'd rather we actually did the same thing elsewhere too.
Consistency here is valuable wherever we can achieve it.

I was surprised to learn we can use GPT on IBM Z, so it's being
explored to support it in kiwi:
https://github.com/OSInside/kiwi/issues/2694

We already use GPT for x86_64 and Power systems. ARM is the fiddly one
because ARM systems kind of suck in terms of platform coherence.

I'm also thinking ahead a bit with RISC-V to figure out if we're going
to have problems here too. I don't think we will, but who knows...?
