Ahhhh, OK, so that's the problem. If it worked, then the syntax would
be:
[schema:path]
e.g.
[org.gnome.settings-daemon.plugins.media-keys.custom-keybinding:/org/gnome/settings-daemon/plugins/media-keys/custom-keybindings/custom1]
But I've just tested it and it doesn't seem to work for me, so I think
it's probably not supported. tbh you might need to ignore everything I
said and go back to dconf. Sorry for steering you down the wrong path.
The gsettings override can change the default value of the setting for
*all* paths, but I do not think it can be used to create a new setting
at a particular path.
