On [https://github.com/apache/tika/pull/2891,] rootvector2 fixed some areas
where we weren't escaping content, which would be problematic for consumers
parsing our generated markdown.
We should consider using an actual markdown library to write markdown. The
challenge/cost is that this should probably be in tika-core.
