Some more explanation for you about fonts: to get the appearance for a field
widget annotation, the /DA entry is used, which is "/SimSun 11 Tf 0 g" (this is
the name, the size and the color). This font is searched in the Acroform
default resources, which is at {{{}Root/AcroForm/DR/Font/SimSun{}}}. Ideally
this font should be fully embedded, but it is not. PDFBox tries to find it in
the fonts on the operating system. And something goes wrong here.
