In addition to Rory's positive answer shown below. The reason you do not see any mention of any copyright or restriction on works created with Apache OpenOffice software, is that no such copyrights or restrictions exist. Being FOSS (Free Open Source Software) Apache OpenOffice does not place any limitations or restrictions on what a user may or may not use the software for.
