For a new version you need to uninstall the old and then install the new version.
Will I be notified by open office?
Yes. When OpenOffice is running there will be a little yellow update notification shown in the top right corner.
What steps do I need to take to do any updates, as I want to insure I am using the latest version at all times?
In order to see the currently installed version, you can have a look into the About dialog (see menu "Help - About OpenOffice").
