As far as I know, Windows 8 and AOO should work. When you open Apache OpenOffice, it should work as a classic desktop application since there's no "Metro" version of Apache OpenOffice available as of now.
At least according to the Microsoft Windows 8 compatibility center, Apache OpenOffice 3.4 is compatible and does not require any tweaks from the users end. http://www.microsoft.com/en-us/windows/compatibility/win8/CompatCenter/ProductDetailsViewer?Type=Software&Name=OpenOffice&Vendor=Apache&ModelOrVersion=3&Locale=1033&BreadcrumbPath=Openoffice&tempOsid=win8 Hope you find this helpful.
